Tex Mex Zucchini Lasagna

So I made this the other night and although it’s not pasta, it was very delicious! 

  • 1 lb ground turkey
  • 2 T ground cumin
  • 2 large zucchini, thinly sliced
  • 1 container cottage cheese
  • 1 egg
  • 1 cup shredded mexican cheese
  • 1 jar salsa
  • 3/4 Cup Salsa of choice

Preheat oven to 350 degrees. Brown turkey in skillet, drain, add cumin. Mix cottage cheese, egg and shredded cheese in bowl.

Add thin layer of salsa to bottom of baking dish. Layer zucchini, ground turkey, salsa, cheese/egg mixture, repeat. Bake for 25-30 minutes or bubbly. Enjoy!

    Sounds good! I will have to try it this week or next weekend. I have also made chicken noodle soup with zucchini and you can’t even tell!
